Assarkhanehs are part of the indigenous-industrial heritage of Iran for the production of oil from plant seeds, which were mainly formed in the center of Iran. Over time and with the advent of technology Assarkhanehs have lost their prosperity , which is why these buildings, which are Iranian traditional architecture, as well as the knowledge and techniques of traditionally oil extraction, have been eliminated and forgotten. The purpose of this research is to identify the values of these buildings and related techniques and to present a conservation and rehabilitation plan.
Therefore, the main research problem in this paper is based on the "study of the architecture, structure and function of the Assarkhaehs and the study of the characteristics, elements and details of their traditional architecture , as well as the recognition of the techniques, details and arrangements of the Assarkhaehs in the production of vegetable oils as part of the forgotten heritage in Iran ". in this why, there are some questions that this research is trying to find the right answer for them. it consider the Assarkhaneh of Jamaleh in Isfahan city as a case study and with descriptive-analytic study method conduct library studies and field investigation on the architecture and its building technology and also process and production mechanism of oil extraction from plant seeds .
The expected results of this research would be identification, introduction and protection by the aim of documentation and providing comprehensive conservation, restoration and restoration plans. In preservation of the identity of indigenous and regional science and technology, and in expressing the creativity of the past generations to meet their essential needs, these results would be useful
