عصارخانه ها به عنوان بخشي از ميراث هاي بومي-صنعتي ايران در راستاي توليد روغن از دانه هاي گياهي هستند كه عمدتا در مركز ايران شكل گرفتند. عصارخانه ها با گذشت زمان و پيشرفت تكنولوژي رونق خود را از دست داده اند و در نتيجه اين بناها كه جزو گنجينه هاي معماري سنتي ايراني هستند و همچنين دانش وتكنيك هاي روغن گيري به روش سنتي رو به نابودي و فراموشي هستند . هدف از اين پژوهش شناخت ارزش هاي اينگونه بناها و تكنيك هاي وابسته و ارائه ي طرح حفاظت و احياء مي باشد. بنابراين مسئله اصلي تحقيق در اين نوشتار بر اساس «بررسي معماري، سازه و كاركرد عصارخانه ها و بررسي شاخصه هاي معماري بومي در آنها و همچنين بازشناسي فنون، جزييات و تمهيدات عصارخانه ها در توليد روغن هاي گياهي به عنوان بخشي از ميراث فراموش شده در ايران» شكل مي گيرد. بر اين اساس سئوالاتي بوجود مي آيد كه اين پژوهش با در نظر گرفتن عصارخانه جماله در شهرستان اصفهان به عنوان نمونه ي موردي و با روش مطالعاتي توصيفي-تحليلي با انجام مطالعات كتابخانه اي و بررسي هاي ميداني در مورد ساختار معماري و تكنولوژي ساختمان آن همچنين فرايند و مكانيزم توليد روغن استحصالي سعي در يافتن پاسخ مناسب براي آنها مي باشد. از نتايج مورد انتظار اين پژوهش مي توان به شناخت، معرفي و حفاظت اين آثار به وسيله مستند سازي، ارايه طرح هاي جامع حفاظت، مرمت و احيا اشاره كرد. اين نتايج مي توانند در جهت حفظ هويت علوم و فنون بومي و منطقه اي، و بيان خلاقيت نسل هاي گذشته بشر در تامين نيازهاي ضروريشان سودمند باشند. واژه‌هاي كليدي: عصارخانه، معماري صنعتي، تكنيك‌ها، اصفهان.

Conservation and Rehabilitation of Jamaleh’s Assarkhaneh in Isfahan

Assarkhanehs are part of the indigenous-industrial heritage of Iran for the production of oil from plant seeds, which were mainly formed in the center of Iran. Over time and with the advent of technology Assarkhanehs have lost their prosperity , which is why these buildings, which are Iranian traditional architecture, as well as the knowledge and techniques of traditionally oil extraction, have been eliminated and forgotten. The purpose of this research is to identify the values of these buildings and related techniques and to present a conservation and rehabilitation plan. Therefore, the main research problem in this paper is based on the "study of the architecture, structure and function of the Assarkhaehs and the study of the characteristics, elements and details of their traditional architecture , as well as the recognition of the techniques, details and arrangements of the Assarkhaehs in the production of vegetable oils as part of the forgotten heritage in Iran ". in this why, there are some questions that this research is trying to find the right answer for them. it consider the Assarkhaneh of Jamaleh in Isfahan city as a case study and with descriptive-analytic study method conduct library studies and field investigation on the architecture and its building technology and also process and production mechanism of oil extraction from plant seeds . The expected results of this research would be identification, introduction and protection by the aim of documentation and providing comprehensive conservation, restoration and restoration plans.
