زنجيره‌تامين موادغذايي به دليل اهميت و نقش آن در زندگي مردم، نيازمند توجه خاص مي¬باشد. با توجه به جايگاه ‌اين صنعت و تاثير آن در بُعد زيست‌محيطي و اجتماعي، درنظرگرفتن ابعاد پايداري در طراحي مهم مي¬باشد.‌ اين زنجيره¬ها داراي منابع متعدد عدم قطعيت هستند كه تاثيرات نامطلوب عملياتي و مالي به همراه دارد. در زنجيره‌تامين پايدار، هنگام بروز اختلال، اهميت اهداف پايداري كاهش و پاسخگويي به اختلال و بازگشت به حالت اوليه اهميت بيشتري مي¬يابد. درچنين شرايطي، يكي از دغدغه¬هاي مديران زنجيره‌تامين ‌ايجاد موازنه¬اي بين اهداف پايداري و تاب¬آوري در زنجيره خواهدبود. مدل¬هاي ارائه شده در ‌اين پژوهش، شاخص¬هاي پايداري و تاب¬آوري را كنار هم ديده¬اند. ميزان انتشارگاز Co2 حاصل از احداث و حمل‌ونقل¬ها در كل زنجيره‌تامين و تصفيه پساب بخش¬توليد به عنوان شاخص¬هاي زيست ‌محيطي؛ ‌ايجاد اشتغال ناشي از احداث و حمل‌ونقل¬ها، توسعه منطقه¬اي و سلامت كاركنان به عنوان شاخص¬هاي اجتماعي دركنار شاخص اقتصادي درنظرگرفته شده¬اند. تاب¬آوري دركل زنجيره با استفاده از سه استراتژي افزايش ظرفيت تسهيلات توزيع، همكاري افقي دربخش توليد و تامين‌كننده پشتيبان درنظرگرفته شده¬است. ازطرفي به علت تقارن كار با شيوع ويروس كرونا، اختلال ناشي از بيماري پاندميك نيز دريك مدل ديده شده‌است. باتوجه به نوع محصول زنجيره كه فسادپذير مي¬باشد دو حالت تاريخ انقضا و نرخ فساد وابسته به تاريخ انقضا تعريف شده¬است. در نهايت مدل ارائه شده در صنعت موادغذايي با نام تجاري 202، و براي سه محصول سوسيس و دو نوع كالباس پياده¬سازي شده‌است. نتايج حاصله نشان مي¬دهد كه در نظرگرفتن ابعاد پايداري در طراحي ‌اين زنجيره¬ها مهم مي¬باشد. از طرفي، از بين سياست¬هاي تاب¬آوري، استراتژي همكاري افقي رقابت منفي بين مراكزتوليد را ازبين برده و 63.5% درآمد را درشرايط اختلال بهبود داده است و 26.82% هم فروش از دست¬رفته را كاهش مي¬دهد. درنظرگرفتن همزمان اهداف پايداري و تاب¬آوري كمك مي¬كند كه مدل انتخاب¬هايي را انجام دهد كه در جهت بهبود اثرات زيست ‌محيطي و اجتماعي باشد. با توجه به پياده¬سازي مدل در مطالعه‌موردي، در بُعد زيست‌محيطي، احداث تصفيه خانه 9% هزينه احداث را افزايش مي¬دهد، در عوض جريمه ناشي از رهاسازي آب را صفر كرده و هزينه خريد آب تازه را نيز 7% كاهش مي¬دهد؛ از طرفي 16% كاهش انتشار Co2 نسبت به شرايط فعلي نيز حاصل شد. در بُعد اجتماعي با احداث مركز‌توزيع در شهر تهران، 11% اشتغال ناشي از احداث مراكز باتوجه به نرخ بيكاري، 4% اشتغال ناشي از حمل‌ونقل¬ها در زنجيره و 12% توسعه منطقه¬اي نسبت به شرايط فعلي افزايش يافت. تابع سود نيز به طور كلي در حالت پايدار 21% بهبود داشته است.

Sustainable Supply Chain Network Design with Resilience Approach in Meat Processed Industry

Nowadays, the food supply chain and its related issues have attracted much attention, due its importance and role in people's lives. It is critical to consider the dimensions of sustainability while designing a supply chain, due to the position of this industry and its impact in the environmental and social dimensions. These chains are affected by many uncertainty sources, which cause substantial financial and tactical burden. In a sustainable supply chain, in the face of unprecedented disruptions, reducing and responding to the disruption and returning to the initial state becomes a priority over maintaining sustainability objectives. Therefore, preserving an equilibrium between sustainability and resilience objectives in the supply chain is one of the main concerns of managers. In this study, multiple models with different assumptions have been developed. Sustainability and resilience indices have been considered in the presented models. The amount of Co2 emissions resulting from the establishment and transportation in the entire supply chain and wastewater treatment in the production sector as environmental indicators have been considered in this model. Employment creation, regional development and employee healthcare are considered as social indicators as well as other financial indicators. Resilience has also been considered in the entire chain, by three general strategies Increasing the capacity of distribution facilities, horizontal cooperation in the production sector and supporting suppliers. This study coincided with the COVID-19 pandemic, therefore the disruption due to this widespread disease was also studied in a separate model. For perishable products, two modes of expiration date and deterioration rate related to expiration date have been defined. The presented model has been implemented in the food industry with the brand name 202 for three products: sausage and two types of bologna. The results of this study reinforces the critical role of sustainability dimensions in designing supply chain. Among the resilience strategies studied, horizontal cooperation diminished the negative competition between production centers and increased income by 63.5% in disruption circumstances and reduced 26.8% lost sale. Simultaneous consideration of sustainability and resiliency objectives boosted the model outcome to improve social and environmental dimensions. By implicating this model in a real case study subsequent results were obtained in the environmental dimensions: 9% increase in establishment cost, 7% decrease in fresh water buying cost, decreased waste water penalty to zero and 16% decrease in Co2 emission. In the social dimension, establishing a distribution center in Tehran increased establishment employment by 11%, transportation employment 4% and 12% increase in regional development index. Sustainable profit objective improved 21% compared to the current situation.
